apple sauce

This weekend I took some time to look at the calendar and realized it's November already!  It sent me into a mini panic because 1) Edwin's 2nd birthday is in exactly one month and 2) I still had apples sitting in my fridge from our apple picking session and a brand new shiny apply peeler that I hadn't even used yet.  Since I'm currently working full time I struggle to figure out how to take care of all of my home responsibilities on Saturday and Sunday when I'm just so wiped from the week.  But this weekend I found a groove and somehow managed to rest, spend time outside, jump in the leaves with Edwin (how is it possible that he is almost 2?!?!) and make my last batch of applesauce.  I bought this apple peeler after using my sister's and I love it so much - it's the nicest apple peeler I've ever used and I highly recommend it.

These days, my favorite method for applesauce is just to fill my pot with peeled and sliced apple rings, add 1/2 cup of organic apple juice for a touch of sweetness, simmer for 30 min, mash with a potato masher, and sprinkle with cinnamon.  Easy, delicious, and will help me savor these last few days of fall.  I'm not sure I'm ready for what lies ahead.
